Fragrant mussels with beer
One of the most simple dishes to barbecue, mussels are cooked in minutes. Salcombe Brewery Atlas pairs perfectly with mussels, the exotic fruity notes compliments the fragrant ginger and chilli.
Ingredients
1kg live mussels, scrubbed and debearded
2 tbsp oil
1 shallot, finely chopped
1 thumb-sized knob of fresh ginger, grated
2 garlic cloves, grated
2 red chillis
175ml beer
70ml coconut cream
2 spring onions, sliced
Method
Bring your BBQ up to searing temperature and use your grates on the lowest rung so it’ll support a large pot.
Place a large cast iron pot onto the grates. Add the oil, then the shallot, ginger, garlic and one of the chillies. Cook until softened, while stirring. Add the mussels, beer and coconut cream. Cover with a lid and cook for approximately 5 minutes, shaking them up from time to time.
When the mussels have just steamed open, they’re done. Discard any mussels that haven’t opened. Spoon the mussels into bowls, garnish with the remaining red chilli, spring onions and basil if you’ve got some to hand. Pour the sauce over the mussels. Serve with fries.
